This certificate program for high school students emphasizes detailed professional preparation methods and techniques, and laboratory preparation and presentation of both hot and cold foods. The classes consist primarily of hands-on preparation of foods especially suited to the commercial and institutional foodservices. Demonstrations are given during most classes.
